I&#8217;m making it today for my friend who just had a baby. It&#8217;s perfect for any situation where you need to build strength, nourish and recover: illness, stress, childbirth&#8230; or to strengthen and protect against colds flu or simply be warm and nourished in the winter.<\/p>\n<p>INGREDIENTS<\/p>\n<p>5 large cloves of garlic<\/p>\n<p>125 g carrots, roll cut<\/p>\n<p>250g leeks, sliced<\/p>\n<p>2 medium onions, diced<\/p>\n<p>150g celery, diced<\/p>\n<p>250gfennel, diced<\/p>\n<p>300g celeriac, large diced<\/p>\n<p>500g potatoes.Large diced<\/p>\n<p>1 whole organic free-range chicken<\/p>\n<p>8 cups 2L vegetable stock<\/p>\n<p>1 \u00bd teaspoons sea salt<\/p>\n<p>juice of \u00bd lemon<\/p>\n<p>\u00bd bunch flat-leaf parsley, finely chopped<\/p>\n<p>wash all vegetables well. place cleaned chicken and all vegetables in a pan. cover with vegetable stock, add the salt. bring to a simmer. do not boil. allow to simmer 1 \u00bd to 2 hours. remove chicken, cool a little. take flesh from the bones and set flesh aside. discard the bones. bring soup back to a simmer. add the lemon juice. place meat back into soup. serve sprinkled with parsley.<\/p>\n<p>My copy of &#8220;Nourish&#8221; is in the US while I am in Australia, writing this.
