CHICKEN SOUP TO CURE ALL ILLS
From Holly Davis Nourish (cookbook)
This soup is recommended by Australian macrobiotic wonder cook, Holly Davis. I’m making it today for my friend who just had a baby. It’s perfect for any situation where you need to build strength, nourish and recover: illness, stress, childbirth… or to strengthen and protect against colds flu or simply be warm and nourished in the winter.
INGREDIENTS
5 large cloves of garlic
125 g carrots, roll cut
250g leeks, sliced
2 medium onions, diced
150g celery, diced
250gfennel, diced
300g celeriac, large diced
500g potatoes.Large diced
1 whole organic free-range chicken
8 cups 2L vegetable stock
1 ½ teaspoons sea salt
juice of ½ lemon
½ bunch flat-leaf parsley, finely chopped
wash all vegetables well. place cleaned chicken and all vegetables in a pan. cover with vegetable stock, add the salt. bring to a simmer. do not boil. allow to simmer 1 ½ to 2 hours. remove chicken, cool a little. take flesh from the bones and set flesh aside. discard the bones. bring soup back to a simmer. add the lemon juice. place meat back into soup. serve sprinkled with parsley.
My copy of “Nourish” is in the US while I am in Australia, writing this. So I found the recipe online here from a TCM practitioner: Kristina Freeman.
This is what she says about it:
This is my favourite chicken soup recipe and comes from the beautiful cookbook Nourish, by Holly Davis. Its great if you are feeling a little rundown and exhausted, fighting the flu, or just want to keep warm and healthy over the colder months. Its also a fabulous recipe for new mums to help build up strength after childbirth.
A great chicken soup. Kids loved it. Adults needed it.
